Partner Description

University of Southern Denmark (Danish. Syddansk Universitet, abbr. SDU) is the third largest university in Denmark. Established in 1966, it includes five faculties, 32 departments, 11 research centers, 32.000 students and 4.000 employees over five campuses. The SDU unit that will participate in SHEALTHY is SDU Innovation and Design Engineering, part of the Faculty of Engineering and is located in Odense (the largest SDU campus). SDU Innovation and Design Engineering is a new (founded in 2017) research section within the Department of Technology and Innovation. The section currently involves 15 employees with diverse backgrounds working on all stages of product development, from ideation to commercialization. A major focus of current research activities is user-driven innovation to the foster industry competitiveness and address societal challenges.

Main tasks

SDU will be involved in WP3, where it will lead the investigation of European consumers’ knowledge, concerns and expectations about mild processing technologies in selected fruit and vegetables. In addition, consumer behaviour in terms of secondary shelf-life and food waste will be analysed.

In WP5 SDU will investigate the effect of mild technologies on structural, nutritional and sensory quality of selected fruit and vegetables.

SDU will also contribute to the dissemination, knowledge transfer and training activities in WP7.
