SHEALTHY project was presented during the 35th EFFoST Conference last 3rd November as joint parallel session with our sister project FOX – #FOXfoodinabox.
Simona Mincione, EU Project Manager, on behalf of ENCO as the SHEALTHY project coordinating organisation, introduced “Mild processing innovations to preserve fresh fruits and vegetables”, providing an insight into SHEALTHY PROJECT innovative aspects.
Elena Torrieri, Scientific & Technical Coordinator of SHEALTHY and Associate Professor in Food Science and Technology at the Department of Agricultural Sciences of UNINA, presented our non-thermal sanitisation, stabilisation and preservation methods and how to optimise the preservation of the nutritional and organoleptic properties.
A focus on Consumers and Business was provided by Macarena Baylos, Innovation Manager of SHEALTHY and head of Business Development at CTIC-CITA, presenting how crucial is the consumer perception over mild technologies and the importance of innovating SMEs (the 99,9% of EU food industry!)
The event ended with a round table about hurdles about implementing ideas moderated Oliver Schlüter from ATB.
